Nature of the soil:
clayey-farinaceous with consistent sulphurous veinings. The ancient volcanic origin and the structure resulting from the decay of sandstone over the millennia, have contributed to making these soils rich in limestone and clay components and to creating a perfect substrate for obtaining wines with intense aromas and particular mineral notes.

fermentation takes place at a temperature of 12 ° C for about 40 days, during which it is enriched with aromas and glycerol. It is made sparkling according to the Charmat Lungo method. It is then re-fermented at low temperatures in the autoclave for approximately 6 months, remaining then for another two months in ageing on the lees.
Ideal as an aperitif and as a “meeting” wine, it perfectly accompanies raw seafood appetizers, shellfish, delicate fish fritters and grilled white meats.
